Chocolate Avocado Pudding
(makes 4 servings)
- 2 cups ripe avocado (from approximately 3 medium avocados)
- 1/2 cup raw almond butter
- 1/2 cup raw cacao powder
- 1/2 cup agave nectar, maple syrup, or coconut nectar
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon vanilla powder
- 1/2 cup water, plus more as needed
Place all of the ingredients in a high speed blender and blend, starting slowly then increasing in speed until you have a smooth and even consistency. You may want to add another few tablespoons of water if the pudding seems too thick. You can eat it right away, or spoon it into ramekins or bowls and chill for later.
