Pomegranate Champagne Cocktail
A trendy drink this holiday season, this is so easy to make! Learning to make simple syrup is so … well, simple. You boil one cup of water with one cup of sugar. And all of a sudden, you feel fancy, and you can make a million different cocktails. You can literally infuse the simple syrup with anything. And infusing is just a fancy way of saying, “Add some ingredient to the mixture when you boil it.” In this instance, it’s pomegranate seeds.
- 1 750 ml bottle champagne or sparkling white wine
- One cup sugar
- One cup water
- Seeds from 1/2 pomegranate (or one of those containers of Pom seeds)
Muddle (mash up) half the pomegranate seeds and put in a saucepan with sugar and water and bring to a boil, reduce heat and stir and simmer until sugar is dissolved. Allow to cool and store in a mason jar or container, chill in the fridge. Use half of the jar of simple syrup per bottle of wine. I usually make these individually, just pouring some syrup in the bottom of a glass then filling it with champagne and adding a spoonful of pomegranate seeds for garnish. But you could also mix it all up in a pitcher to have at the ready.

If my family has a signature drink, this is it. My father is actually the one to mix up this popular concoction every Christmas Eve, much to everyone’s delight since he’s not exactly the party animal. It’s the first thing people ask for when they come to one of our parties. And you just dump it all in a big punch bowl, so it can’t get easier than that. Again, you could also mix this in a pitcher.

- 6 oz. Lemon Juice
- 6 oz. can Frozen Lemonade
- 6 oz. can Frozen Orange Juice
- 3 liters Lemon-Lime Soda
