Pumpkin Cranberry Spice Muffins

 

Pumpkin Cranberry Spice Muffins by Lottie Bildirici of Running on Veggies (makes 24 muffins)

“These are basically Thanksgiving in a muffin!”

Ingredients:

  • 3 cups old fashioned oatmeal (1 cup divided)
  • 2 teaspoons chia seeds mixed with 4 tablespoons of warm water (let sit for 5 minutes)
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 cup pumpkin puree
  • 1/2 cup unsweetened applesauce
  • 2 cups soaked dates
  • 2 cups nut milk
  • 1/3 cup almond butter
  • 1 cup cranberries

Preheat oven to 350 degrees. In a food processor, add all dry ingredients: 3 cups of oatmeal, chia seeds mixed with water, baking powder, cinnamon and nutmeg. Puree until flour forms. Add wet ingredients: Pumpkin puree, applesauce, dates, almond milk and almond butter. Puree until well combined and with no chunks. Transfer to a bowl, fold in cranberries and 1 cup of oatmeal. Divide into muffin tray to make 24 small muffins. Top with a sprinkle of oatmeal, crushed almonds and cranberries. Bake 30 to 35 minutes.
